Delicious dish featuring tomatoes, onions, peppers, wine, and flavorful seasonings.
Ingredients:
  • 1 whole chicken, cut into pieces
  • 1 tablespoon butter
  • 1 large onion, chopped
  • 1 large green bell pepper, sliced thin
  • 1 teaspoon crushed garlic
  • 2 (14.5 ounce) cans diced tomatoes, drained and juice reserved
  • 1 cup Burgundy wine
  • 1.5 tablespoons Italian seasoning
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon garlic salt
  • 2 tablespoons all-purpose flour
  • 1 (16 ounce) package spaghetti
Instructions:
  • In a large stockpot over medium heat, melt the butter. Sauté the onion, bell pepper, and garlic in the butter until softened, for about 3 minutes. Stir in tomatoes, wine, Italian seasoning, salt, pepper, and garlic salt. Simmer until it starts to boil. Lower the heat to medium-low, add chicken, and cook until tender, about 1 1/2 hours. Discard bones and skin from the chicken, returning the meat to the pot.
  • Microwave 3/4 cup of reserved tomato liquid until warm. Mix in flour until thickened, then add to the stockpot, stirring until it thickens. Let it rest for 15 minutes off the heat before serving.
  • Let the chicken mixture sit while you bring a pot of lightly-salted water to a boil. Add the spaghetti and cook until al dente, about 12 minutes. Drain the pasta and top with the chicken mixture before serving.
