Create unforgettable spicy Italian sausage using Chef John's family recipe.
Ingredients:
  • 3 pounds pork shoulder
  • 1 ounce kosher salt, divided
  • 2 tablespoons whole fennel seeds, toasted
  • 1 teaspoon anise seed
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons red pepper flakes
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried marjoram
  • 0.5 teaspoon ground coriander
  • 0.5 teaspoon ground mustard
  • 0.25 teaspoon ground allspice berries
  • 1 tablespoon white sugar
  • 2 tablespoons cold water
  • sausage casing, soaked in water until soft
Instructions:
  • Cube the pork shoulder and chill in a bowl while you get the rest of the ingredients ready.
  • Create a fragrant paste by grinding garlic with a pinch of salt in a mortar. Add fennel, anise, and black pepper, then gently crush the spices to enhance their flavors. Mix in red pepper flakes, cayenne pepper, oregano, marjoram, coriander, mustard, allspice, sugar, and a splash of water, stirring until well combined.
  • Massage the spice paste into the pork cubes until well combined. Sprinkle the remaining salt, cover, and refrigerate for at least 8 hours or overnight to blend the flavors.
  • Run the chilled pork through a meat grinder on the lowest setting.
  • Prepare the meat grinder by attaching the casing to the stuffing tube. Add the sausage meat to the filling tray and start running it through the casing on the slowest speed until it's all used. Tie a knot at the end of the casing. Twist and pinch the meat to form individual links if preferred.
  • Lay the sausage on a wire rack over a sheet pan and chill uncovered in the refrigerator for 24 hours.
  • Prepare the charcoal grill for medium heat. Grill the sausage links, flipping once, until beautifully browned on both sides, approximately 5 minutes per side.
