Succulent meatballs blend beef, sausage, and Italian bread for juicy, freezable perfection.
Ingredients:
  • 2 tablespoons bacon fat
  • 3 cups finely chopped onion
  • 6 cloves garlic, finely chopped
  • 1 loaf fresh Italian bread, or more as needed
  • 0.5 cup whole milk
  • 0.5 cup chicken broth
  • 2 eggs, beaten
  • 0.5 cup chopped fresh parsley
  • 2 tablespoons Celtic sea salt
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Italian herb seasoning (such as Penzeys)
  • 1 teaspoon ground black pepper
  • 3 pounds ground beef
  • 1 pound bulk pork sausage
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and lightly grease your rimmed baking sheets.
  • Heat the rich and flavorful bacon fat in a pan over gentle heat. Cook the aromatic onion and garlic in the sizzling pan until tender, for about 5 to 7 minutes. Take the pan off the heat and let the mixture cool down.
  • Once the mixture has cooled, slice the loaf of bread in half horizontally. Hollow out the white bread to create a crusty shell, setting aside the crust for future use in pizza bread or garlic toast. Tear the white bread into pieces, resulting in approximately 5 to 6 cups, and transfer to a bowl.
  • In a bowl, mix together milk, chicken broth, and eggs. Pour the mixture over the torn bread and use your fingers to mash the bread into small pieces. Stir in the cooled onion and garlic, ensuring everything is well mixed. Add parsley, salt, Worcestershire sauce, mustard, Italian seasoning, and pepper. Mix thoroughly until well combined.
  • In a large mixing bowl, use your hands to blend together ground beef and sausage. Add the bread mixture gradually, about 1 cup at a time, ensuring thorough mixing between each addition until everything is evenly combined.
  • Roll the mixture into meatballs and place them on the prepared baking sheets.
  • Bake the meatballs for about 30 minutes until they are golden brown and fully cooked through.
