Make mouthwatering pappardelle pasta at home with basic tools, minimal ingredients, and a touch of love.
Ingredients:
  • 3/4 cup 00 flour, plus more for dusting
  • 1/4 cup semolina flour
  • 2 large eggs
Instructions:
  • In a food processor bowl, pulse together 00 flour, semolina flour, and eggs until dough forms.
  • Place the dough on a lightly floured cutting board and knead it about 10 times using the palm of your hand. Cover the dough with a damp towel and let it rest for about 10 minutes. Shape the dough into a disc, wrap it, and refrigerate for at least 30 minutes.
  • Lay dough on a lightly floured surface, sprinkling with more flour. Roll out dough with a rolling pin from the middle outwards to form a thin sheet. Fold dough into thirds, like a letter: fold one end over 1/3, then the opposite end over 1/3. Roll dough thin and set aside to rest for 5 minutes.
  • Roll the dough gently like a cinnamon roll and cut into 3/4-inch-wide slices using a sharp knife. Unwrap the noodles, dust with semolina, and gently separate by tossing.
  • Boil generously salted water and cook noodles until perfectly al dente, about 1 to 3 minutes.
