Easy homemade fluffy and delicious pita bread recipe that never disappoints!
Ingredients:
  • 1 (.25 ounce) package active dry yeast
  • 1 cup warm water (90 to 100 degrees F/32 to 38 degrees C)
  • 1 cup all-purpose flour
  • 1.5 tablespoons olive oil
  • 1.75 teaspoons salt
  • 1.75 cups all-purpose flour, or more as needed
  • 1 teaspoon olive oil, divided
Instructions:
  • In the bowl of a stand mixer, combine yeast, 1 cup warm water, and 1 cup flour. Whisk until blended, then allow the mixture to rest until it becomes bubbly and foamy, approximately 15 minutes.
  • Pour 1 1/2 tablespoons of olive oil and a pinch of salt into the yeast mix, then add 1 1/2 cups of flour. Using a dough hook at low speed, combine until the dough is soft, supple, and slightly sticky. Knead the dough on low speed until slightly springy and soft, which should take about 5 to 6 minutes. If the dough sticks to the sides of the bowl, gradually add up to 1/4 cup more flour. Transfer the dough onto a floured surface and shape it into a ball.
  • Coat the inside of the bowl with 1/4 teaspoon of olive oil. Gently toss the dough in the bowl to ensure it is lightly coated with oil. Cover the bowl with foil and allow the dough to rise until doubled in size, approximately 2 hours.
  • After the dough has doubled in size, transfer it to a floured work surface. Gently flatten it into a 1-inch thick shape, then use a knife to divide it into 8 equal pieces.
  • Shape the dough into small round balls with a smooth top by pulling the sides and tucking the ends underneath.
  • Allow the dough balls to rest for 30 minutes by covering them with lightly oiled plastic wrap.
  • Place the dough balls on a floured work surface and dust the tops with flour. Gently pat each ball with your fingers to create a 1/4-inch thick round disc. Allow the dough to rest for 5 minutes before moving on.
  • Brush the cast iron skillet with the remaining 3/4 teaspoon of olive oil and heat over medium-high. Place one round of dough in the skillet and cook for 30 seconds. Flip and cook for 1 to 2 minutes. Flip again and cook for an additional 1 to 2 minutes until both sides are golden brown. Stack the cooked bread on a plate, and once cool enough, slice in half and open the pocket for stuffing.
