Satisfy pizza cravings with homemade deliciousness.
Ingredients:
  • 7g sachet dried active yeast
  • 5.00 gm caster sugar
  • 225g plain flour
  • 130g pasta sauce
  • 150g fior di latte cheese (see note) or 2 bocconcini, sliced
  • 2 red onions, cut into wedges, chargrilled
  • 1 small eggplant, thinly sliced, chargrilled
  • 12 semi-dried tomatoes
  • Rocket, to serve
  • Basil leaves, to serve
  • 50g sliced hot Italian salami
  • 125.00 ml roasted capsicum strips
  • Pesto, to serve
  • Watercress sprigs, to serve
Instructions:
  • In a bowl, combine 150ml lukewarm water with yeast and sugar. Let it sit for 15 minutes until bubbles form. In another bowl, sift flour and 1 1/2 teaspoons salt.
  • Create a well in the center, pour in the yeast mixture, and combine with oiled hands until a ball of dough forms. Transfer it onto a floured surface and knead for 10 minutes until the dough is smooth and elastic. You can also use an electric mixer with a dough hook attachment. Place the dough in an oiled bowl, cover it with plastic wrap, and let it rise in a warm place for 1 hour until doubled in size.
  • Roll the dough into a 3mm-thick rectangle on a floured surface, ensuring to not press out the air. Place on an oiled baking tray, cover with a tea towel, and let it rest in a warm spot for 30 minutes until slightly risen.
  • Spread a generous amount of tomato sauce, leaving a 2cm border. Add a generous amount of cheese and your favorite toppings. Bake the pizzas for 8-10 minutes until they are cooked and golden. Slice and serve them with fresh rocket and basil, or with pesto and watercress.
