Pesto Chicken Pizzas

Quick and easy homemade pizzas perfect for busy families.
Ingredients:
  • 1 cup cut-up cooked chicken breast
  • 2 tablespoons refrigerated reduced-fat or regular basil pesto
  • 4 whole wheat pita (pocket) breads (6 inch)
  • 1/2 cup pizza sauce
  • 1/4 cup chopped onion
  • 1/4 cup chopped yellow bell pepper
  • 1/4 cup shredded reduced-fat mozzarella cheese (1 oz)
  • 2 tablespoons shredded Parmesan cheese
Instructions:
  • Preheat the oven to 400°F. Combine chicken and pesto in a medium bowl until well mixed.
  • Lay out pita bread on a baking sheet. Evenly spread 2 tablespoons of pizza sauce on each pita. Divide chicken mixture equally among the pitas and top with the remaining ingredients.
  • Bake for approximately 10 minutes, or until the cheese is gooey and melted. Slice the pizzas into tasty wedges.
