Pesto-Chicken Sandwiches

Create a New York deli-style hot sandwich on a pizza crust.
Ingredients:
  • 1 package (10 ounces) ready-to-serve Italian pizza crusts (7 inches in diameter)
  • 1 tablespoon olive or vegetable oil
  • 1 medium celery stalk, chopped (1/2 cup)
  • 1 cup cut-up cooked chicken
  • 1/3 cup basil pesto
  • 2 tablespoons freshly grated Parmesan cheese
  • 1/2 cup shredded lettuce
Instructions:
  • If desired, heat the pizza crusts according to the package instructions.
  • Heat oil in a 10-inch skillet over medium-high heat. Sauté celery for 4 to 5 minutes until crisp-tender. Reduce heat, then add chicken and pesto, stirring occasionally until hot.
  • Spread the chicken mixture evenly over the pizza crusts. Combine cheese and lettuce, then sprinkle over the chicken. Cut each pizza crust in half.
