Homemade Pumpkin Puree in the Microwave

Whip up fresh pumpkin puree in minutes using the microwave for a speedy and delicious alternative to store-bought.
Ingredients:
  • 1 pie pumpkin
Instructions:
  • Using a sturdy knife, carefully remove the stem from the pumpkin to create an opening. Remove the pulp and seeds, setting aside the seeds for roasting later. Slice the pumpkin into quarters and then halve each quarter.
  • Put pumpkin pieces in a microwave-safe bowl and seal tightly with plastic wrap to trap all the delicious flavors inside while cooking.
  • Microwave for 7 minutes. Check the seal of the plastic wrap halfway through to maintain moisture. Microwave for an additional 8 minutes. Remove plastic wrap by pulling it back towards you to allow steam to escape. Let cool for 10 minutes before enjoying.
  • Peel pumpkin skin by hand.
  • Purée the peeled pumpkin using a food processor, hand masher, or potato ricer.
