Create a magical homemade tomato sauce with simmered tomatoes, herbs, veggies, and olive oil. Use canned or fresh tomatoes for a versatile sauce perfect for pizza, pasta, and beyond.
Ingredients:
  • 1/2 medium onion, finely chopped
  • 1 small carrot or 1/2 large carrot, finely chopped
  • 1 small stalk of celery, including the green tops, finely chopped
  • 2 tablespoons chopped fresh parsley
  • 1 clove garlic, minced
  • 1/2 teaspoon dried basil or 2 tablespoons chopped fresh basil
  • 1 (28 ounce) can whole tomatoes, including the juice, or 1 3/4 pound of fresh tomatoes, peeled, seeded, and chopped
  • 1 teaspoon tomato paste
  • Salt and freshly ground black pepper to taste
Instructions:
  • Sauté onion, carrot, celery, and parsley: In a wide skillet over medium heat, heat olive oil. Add chopped onion, carrot, celery, and parsley, stirring to coat. Cover and cook on low for 15-20 minutes, stirring occasionally until vegetables are tender.
  • Uncover the pan and introduce the minced garlic, then raise the heat to medium-high and cook the garlic for 30 seconds.
  • Combine tomatoes with tomato paste, basil, salt, and pepper, and simmer: Gently mix the tomatoes, with their juice, and shred them by hand if using canned whole tomatoes. Stir in tomato paste and basil, then season with salt and pepper. Bring to a low simmer and cook uncovered until thickened, about 15 minutes.
