Homemade Valentine's Chocolates

Delicious Valentine's Day truffles with a touch of spicy chipotle, coated in cocoa powder by Chef John.
Ingredients:
  • 0.5 pound high-quality dark chocolate, chopped
  • 0.125 teaspoon ground dried chipotle pepper
  • 1 pinch salt
  • 0.5 cup heavy whipping cream
  • 3 tablespoons unsweetened cocoa powder, or as needed
Instructions:
  • Combine rich, velvety chocolate with smoky chipotle pepper and a touch of salt in a bowl.
  • In a small saucepan, warm the cream over medium-low heat until it boils. Pour the hot cream over the chocolate and let it sit for 3 minutes. Gently stir until the chocolate is completely smooth.
  • Spread the chocolate mixture onto a sheet of plastic wrap. Roll the chocolate into a log shape by lifting one edge of the plastic. Wrap the chocolate tightly in the plastic. Chill in the refrigerator until firm, for about 30 to 60 minutes.
  • Add cocoa powder to a small bowl.
  • Unwrap the chocolate and cut it in half crosswise. Then, cut each half into halves lengthwise to make squares about 1/2 inch in size.
  • Gently coat chocolate squares with cocoa powder by tossing them together.
