Honey and soy chicken skewers with stir-fried Asian greens

Grilled chicken skewers with fluffy steamed rice and vibrant Asian greens.
Ingredients:
  • 2 x 450g pkts Grill Chicken Thigh Skewers Honey & Soy
  • 9.20 gm peanut oil
  • 125g baby corn
  • 1 bunch baby broccoli, trimmed
  • 1 long red chilli, thinly sliced
  • 2cm-piece ginger, julienned
  • 1 garlic clove, crushed
  • 1 baby buk choy, trimmed, coarsely chopped
  • 21.00 gm soy sauce
  • Steamed jasmine rice, to serve
Instructions:
  • Preheat a barbecue grill or chargrill over medium-high heat. Remove skewers from marinade, keeping the marinade for later. Grill skewers, turning them occasionally, for 10-15 minutes or until fully cooked.
  • Heat oil in a wok over medium-high heat. Stir-fry baby corn and baby broccoli for 3 minutes. Add chili, ginger, and garlic. Stir-fry for 2 minutes. Add bok choy, soy sauce, and reserved marinade. Stir-fry for an additional 2 minutes until bok choy is tender.
  • Arrange the rice and vegetables on serving plates and garnish with the skewers.
