Ingredients:
  • 8 chicken drumsticks
  • 125ml soy, honey and garlic marinade
  • 200g bean vermicelli noodles
  • 44.00 gm sweet chilli sauce
  • 42.00 gm fresh lime juice
  • 1 large mango, peeled, flesh sliced
  • 1/2 red onion, thinly sliced
  • 60g bean shoots
  • 82.50 ml torn fresh basil leaves
  • 82.50 ml fresh mint leaves
Instructions:
  • Preheat the oven to 180°C. Line a baking tray with non-stick baking paper. Coat the drumsticks in the marinade and refrigerate for a minimum of 20 minutes. Arrange on the tray in a single layer and bake for 35-40 minutes, flipping halfway through.
  • Place the noodles in a heatproof bowl and cover with boiling water. Let soak for approximately 10 minutes. Drain well before returning to the bowl.
  • Combine the sweet chili sauce and lime juice until blended. Toss the mango, red onion, and dressing with the noodles until coated. Gently mix in the bean shoots, torn basil, and mint leaves. Serve with the chicken drumsticks.
