Fruity bran muffins with pineapple juice, golden raisins, shredded wheat-bran cereal, honey, and brown sugar. Prepare batter night before for fresh morning baking. Refrigerate overnight.
Ingredients:
  • 2 cups pineapple juice
  • 2 cups golden raisins
  • 1 cup packed brown sugar
  • 0.5 cup vegetable oil
  • 0.5 cup honey
  • 5 eggs, beaten
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 4 cups whole bran cereal
Instructions:
  • Mix the pineapple juice and raisins in a small bowl and let it sit.
  • Combine flour, baking soda, and salt in a medium bowl. Gently fold in the cereal. Set aside for later use.
  • Combine brown sugar, oil, honey, and eggs in a large mixing bowl until well mixed. Add cereal mixture and combine. Gently fold in the raisin mixture. The batter will be thin but will thicken as it chills. Cover and refrigerate for at least 3 hours or overnight.
  • Gently mix the chilled batter, then portion it into greased or paper-lined muffin cups, filling them three-quarters full.
  • Bake at 400°F (205°C) for 20-25 minutes until golden brown. Allow to cool in the pan for 10 minutes before transferring to a wire rack.
