Indulge in tasty honey-bran muffins with Gold Medal® flour - ready in just 35 minutes.
Ingredients:
  • 1/4 cup wheat bran
  • 3 tablespoons boiling water
  • 1/4 cup milk
  • 1/4 cup honey
  • 3 tablespoons vegetable oil
  • 1 egg
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • Granulated sugar, if desired
Instructions:
  • Preheat the oven to 400°F. Line 6 regular-size muffin cups with paper baking cups and spray them with cooking spray.
  • Combine wheat bran with boiling water in a small bowl. In a medium bowl, vigorously mix milk, honey, oil, and egg until fully combined. Fold in the wheat bran mixture, flour, baking powder, cinnamon, and salt until just moistened. Distribute the batter evenly into the muffin cups and sprinkle with granulated sugar.
  • Bake for 15-20 minutes until golden brown with springy tops. Remove from pan and transfer to a cooling rack.
