Indulgent honey cupcakes with luscious whipped cream and juicy strawberries. Sweet delight for your taste buds!
Ingredients:
  • 0.25 cup butter, softened
  • 0.25 cup white sugar
  • 0.75 cup honey
  • 0.5 cup buttermilk
  • 0.5 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.25 teaspoon salt
  • 0.75 cup heavy cream
  • 2 tablespoons confectioners' sugar
  • 1 pint strawberries, sliced
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin pan by greasing it or lining with paper baking cups.
  • In a medium bowl, use an electric mixer to cream together the butter and sugar until light and fluffy. Add in the honey, eggs, buttermilk, and vanilla, and mix well. In a separate bowl, combine the flour, baking powder, and salt, then gently fold it into the batter until just combined. Evenly spoon the batter into the prepared cups.
  • Bake in the preheated oven for 20-25 minutes, or until the tops spring back when lightly pressed. Cool in the pan on a wire rack, then arrange the cupcakes on a serving platter.
  • In a chilled bowl, use an electric mixer to whip the heavy cream until stiff peaks form. Sweeten with confectioners' sugar to taste. Dollop onto cupcakes and garnish with sliced strawberries just before serving.
