Honey jumble biscuits

These Honey Jumble Biscuits are the perfect blend of sweet and spicy flavors.
Ingredients:
  • 60g butter, chopped
  • 178.75 gm honey
  • 45.00 gm firmly packed brown sugar
  • 375.00 ml plain flour
  • 1.25 gm bicarbonate of soda
  • 2.50 gm ground ginger
  • 1.25 gm mixed spice
  • 1/4 tsp ground cloves
  • 10.40 gm milk
  • 1 egg white
  • 225.00 gm pure icing sugar, sifted
  • 10.60 gm lemon juice
  • Pink food colouring
Instructions:
  • In a saucepan over medium heat, melt together butter, honey, and sugar until smooth. Bring to a boil, then remove from heat and let sit for 10 minutes before using.
  • Sift the dry ingredients over the butter mixture, then add the milk and stir to combine. Cover and let it sit for 1 hour until the mixture has cooled and thickened.
  • Preheat oven to 180°C/160°C fan-forced and line 2 large baking trays with baking paper. Turn out dough onto a lightly floured surface, lightly knead, then divide into quarters. Roll 1 quarter into a 25cm-long log and cut into 5cm-long pieces. Place on trays, leaving space between each. Flatten each piece with a wooden spoon until 5mm-thick. Bake for 10-12 minutes until light golden, then let cool on the tray for 10 minutes before transferring to a wire rack to cool completely.
  • Using a whisk, beat the egg white in a bowl until foamy. Gradually mix in the icing sugar until well combined. Add lemon juice and stir. Transfer half of the mixture to a separate bowl and tint it pink with food coloring. Spread pink icing on half of the biscuits and white icing on the rest. Let it sit for 30 minutes to set before serving.
