Ingredients:
  • 400g packet McVitie’s The Original Digestives biscuits
  • 200g butter, melted
  • 450.00 gm pure icing sugar, sifted
  • 1 egg white
  • 5.30 gm lemon juice
  • Rose pink liquid food colouring
  • 187.50 ml plain flour
  • 49.50 gm self-raising flour
  • 5.00 gm ground ginger
  • 1.25 gm mixed spice
  • 75g butter, chopped
  • 90.00 gm brown sugar
  • 178.75 gm honey
  • 1.25 gm bicarbonate of soda
Instructions:
  • Preheat your oven to 180C (160C fan-forced) and prepare a 20cm x 30cm lamington pan by greasing it and lining the base and sides with baking paper, leaving an extra 2cm of paper extending above the edges of the pan.
  • Place biscuits in a food processor and process into fine crumbs. Add butter and process until just combined. Press mixture onto the base of the prepared pan.
  • For the filling, mix flours, ginger, and mixed spice in a heatproof bowl, then create a well in the center. In a medium saucepan, melt butter with sugar and 1/3 cup honey over medium heat until smooth. Bring to a simmer, then remove from heat. Stir in bicarbonate of soda, and then add to the flour mixture, stirring to combine.
  • Evenly spread the filling on the pan, then bake for 30 minutes until perfectly cooked. Brush the top with the remaining honey and allow it to cool completely.
  • In an electric mixer, whip together icing sugar and egg white until smooth. Stir in lemon juice and beat for 30 seconds. Finish by adding a drop of food coloring.
  • Evenly distribute the filling on the pan. Bake for 30 minutes, or until fully cooked. Lightly brush the top with the remaining honey. Allow it to cool completely before serving.
  • In an electric mixer, blend icing sugar and egg white until smooth. Mix in lemon juice. Stir for 30 seconds. Add a drop of food colouring and mix well, adding more as needed for a pale pink hue. Spread the icing over the slice, then let it sit for 3 hours to set. Finally, slice into bars and serve.
