Make delicious spiced honey cookies with simple pantry staples!
Ingredients:
  • 185ml honey
  • 300g plain flour
  • 2.50 gm bicarbonate of soda
  • 10.00 gm ground ginger
  • 2.50 gm ground cinnamon
  • 1.25 gm ground nutmeg
  • 1/4 tsp ground cloves
  • 41.20 gm milk
  • 1 Free Range Egg white*
  • 240g icing sugar
  • Pink liquid food colouring
Instructions:
  • In a saucepan over medium heat, melt butter with honey and sugar until the mixture starts to simmer. Let it cool for 10 minutes before using.
  • In a large bowl, mix together the flour, bicarbonate of soda, ginger, cinnamon, nutmeg, and cloves. Add the honey mixture and milk, stirring until well combined. Cover with plastic wrap and refrigerate for 30 minutes to chill.
  • 1. Preheat your oven to 180°C and line 2 large baking trays with baking paper. 2. Turn the dough onto a lightly floured surface and gently knead it until smooth. 3. Divide the dough into 4 even portions and roll each portion into a 1.5cm-thick log. 4. Use a small sharp knife to cut each log into 6cm lengths. 5. Place the dough pieces on the lined trays, allowing room for spreading, and gently press each biscuit until 1cm thick.
  • Bake for 10 minutes or until golden brown, swapping the trays halfway through cooking. Let cool completely on the trays.
  • - Whisk the egg white in a bowl until frothy, then add the icing sugar and stir until smooth. - Spread half of the icing over half of the biscuits. - Color the remaining icing pink with food coloring and spread it over the rest of the biscuits. - Set aside for 30 minutes or until the icing is set.
