Create festive spiced honey jumbles with red and green colors.
Ingredients:
  • 80g butter
  • 185ml honey
  • 2.50 gm bicarbonate of soda
  • 5.00 gm ground ginger
  • 2.50 gm ground cinnamon
  • 0.63 gm ground nutmeg
  • 1/4 tsp ground cloves
  • 41.20 gm milk
  • 1 egg white
  • 5.30 gm lemon juice
  • 230g icing sugar
  • Red food colouring gel
  • Green food colouring gel
Instructions:
  • In a small saucepan, melt the butter with honey over low heat, stirring constantly until the mixture starts to simmer, about 3 minutes. Remove from heat and let it cool for 15 minutes.
  • In a large bowl, mix flour, bicarbonate of soda, ginger, cinnamon, nutmeg, and cloves. Add the honey mixture and milk, stir until fully combined. Chill in the fridge for 30 minutes until firm.
  • 1. Preheat your oven to 180C and line 2 oven trays with baking paper. 2. Transfer the dough onto a lightly floured surface and gently knead until smooth. 3. Divide the dough into 4 portions. 4. Roll each portion into a 1.5cm-thick log that is about 60cm long. 5. Cut each log into 6cm lengths and place them on the lined trays, leaving space for spreading.
  • Bake in a preheated oven, switching trays halfway, until lightly golden, 10-12 minutes. Remove from oven and let cool completely on trays.
  • In a small bowl, whisk egg white and lemon juice using an electric mixer until soft peaks form. Stir in icing sugar until smooth. Divide icing into two portions and color one portion red and the other green. Spread colored icings over each biscuit and let them set for 30 minutes.
