Kid-approved honey cookies for a sweet treat.
Ingredients:
  • 1.25 gm ground cinnamon
  • 85g butter
  • 178.75 gm honey
  • 59.40 gm brown sugar
  • 500.00 ml plain flour
  • 1.25 gm bicarbonate of soda
  • 1.25 gm mixed spice
  • 225.00 gm icing sugar mixture
  • 20g butter, melted
  • 40.00 gm boiling water
Instructions:
  • In a medium saucepan over low heat, melt butter with honey and sugar, stirring for 3 to 4 minutes until fully combined. Allow the mixture to cool for 15 minutes, then transfer to a large bowl.
  • Sift flour, bicarbonate of soda, mixed spice, and cinnamon over the butter mixture, stirring until fully combined. Transfer the dough to a lightly floured surface and knead for 1 minute until smooth. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
  • Preheat your oven to 180°C/160°C fan-forced. Line 3 large baking trays with baking paper. Roll 2 level teaspoons of the mixture into balls and place them on the trays, ensuring they are 3cm apart for spreading. Gently flatten the balls slightly. Bake each tray separately for 8 to 10 minutes until they are golden and slightly firm to touch. Allow them to cool on the trays for 5 minutes before transferring to a wire rack to cool completely. Serve and enjoy!
  • Sift icing sugar into a bowl, then mix in butter and boiling water until smooth and spreadable. If needed, add more water. Spread the icing over the biscuits and let it set.
