Honey mustard chicken risoni

Succulent chicken with flavorful risoni for a delightful meal.
Ingredients:
  • 36.40 gm olive oil
  • 500g chicken breast, trimmed, thinly sliced
  • 1 red capsicum, seeded, thinly sliced
  • 1 onion, finely chopped
  • 1 garlic clove, crushed
  • 57.20 gm honey
  • 23.40 gm Australian mustard, or grain mustard
  • 300ml carton thickened cream (see Notes)
  • 100g snow peas, trimmed, sliced
  • 40.00 ml fresh parsley, chopped, plus extra to serve
  • 375.00 ml risoni pasta, cooked (see Notes)
Instructions:
  • Heat the oil in a hot pan until sizzling. Cook chicken until golden and fully cooked, approximately 3-4 minutes per side. Place the chicken on a plate.
  • In the same pan, heat the remaining oil over high heat. Sauté the capsicum, onion, and garlic for 5 minutes or until tender. Add honey and mustard, then pour in the cream. Simmer and stir for 4-5 minutes until the sauce thickens.
  • Add the chicken back to the pan along with snow peas and parsley. Gently heat for 2-3 minutes. Serve over risoni, and sprinkle with additional parsley.
