Budget-friendly and kid-approved meal for the whole family!
Ingredients:
  • 89.38 gm honey
  • 2 garlic cloves, crushed
  • 2 tsp dried mixed herbs
  • 35.10 gm wholegrain mustard
  • 8 chicken drumsticks
  • 500g desiree potatoes, roughly chopped
  • 500g orange sweet potato, peeled, roughly chopped
  • 18.20 gm olive oil
  • 1 bunch asparagus, trimmed
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. In a bowl, mix together honey, garlic, herbs, and mustard. Place chicken in a single layer in a ceramic baking dish and pour the honey mixture over the chicken, ensuring it's well coated.
  • Prepare a baking tray by lining it with baking paper. Arrange potato and sweet potato on the tray. Drizzle with oil and season with salt and pepper. Toss to ensure they are evenly coated. Bake at 375°F for 45 minutes, flipping the chicken and potatoes halfway through.
  • Add the asparagus to the same tray as the potatoes. Roast for 10 minutes, or until the chicken is golden and cooked through, and the vegetables are tender. Serve hot.
