Ingredients:
  • 40g butter, chilled, cubed
  • 75g plain flour
  • 80g pine nuts
  • 35g rolled oats
  • 32.00 gm brown sugar
  • 1 tsp grated lemon rind
  • 1.25 gm ground cinnamon
  • 8 gala or pink lady apples
  • 60ml honey
  • Double cream or ice cream, to serve
Instructions:
  • Preheat the oven to 180°C. Use your fingers to incorporate 40g of chilled, cubed butter into 1/2 cup (75g) of plain flour until the mixture resembles crumbs. Stir in 80g of pine nuts, 1/3 cup (35g) of rolled oats, 2 tablespoons of brown sugar, 1 teaspoon of grated lemon rind, and 1/2 teaspoon of ground cinnamon.
  • Prepare 8 royal gala or pink lady apples by coring them and scoring around the center. Fill the centers with the crumble mixture and arrange in a baking dish.
  • Enhance the crumble by generously sprinkling it over the apples. Drizzle with 1/4 cup (60ml) of honey and bake for 20-25 minutes. Finish with an additional drizzle of honey before serving alongside double cream or ice cream.
