Roasted apples with honey nut crumble, yogurt. Collaborate with Curtis Stone and Olympian James Magnussen for a delicious fruity dessert.
Ingredients:
  • 20g unsalted butter
  • 28.60 gm honey
  • 0.63 gm ground cinnamon
  • 1/8 tsp ground cloves
  • 0.63 gm ground nutmeg
  • 82.50 ml pecans, lightly crushed
  • 82.50 ml flaked almonds
  • 20.00 ml sunflower seeds
  • 1 tsp orange zest
  • 4 small gala apples, cut in half lengthways, cored (with a melon baller)
  • 90.00 gm (firmly-packed) brown sugar
  • 393.75 gm orange juice
  • 5.30 gm lemon juice
  • 250.00 ml Greek yoghurt, to serve
Instructions:
  • Preheat your oven to 180C (160C fan-forced) and line a baking tray with parchment paper for the Honey Nut Crumble.
  • Melt butter in a small saucepan over medium heat. Stir in honey and spices. Bring to a simmer, then remove from heat and set aside.
  • Combine pecans, almonds, seeds, and zest in a medium bowl. Drizzle butter mixture over the mixture and toss until everything is evenly coated.
  • Spread the nut mixture evenly on the baking tray and bake for 10 minutes, stirring occasionally until golden brown and checking halfway through. Let it cool completely.
  • Preheat the oven to 200C (180C fan-forced).
  • Arrange sliced apples, cut side facing up, in a generously sized baking dish. Sprinkle the apples with a layer of brown sugar, then evenly pour the refreshing mix of orange and lemon juice over them.
  • Bake until the apples are tender and lightly caramelized, for about 30-35 minutes.
  • Arrange apple halves on 4 elegant dessert plates.
  • Dollop a generous spoonful of yogurt on top, drizzle with syrup, and sprinkle with honey nut crumble. Serve right away.
