Try these nutritious freezer-friendly oat muffins.
Ingredients:
  • 375.00 gm self-raising flour
  • 66.00 gm rolled oats
  • 56.10 gm sultanas
  • 321.88 gm milk
  • 178.75 gm honey
  • 1 egg, lightly beaten
  • 90g butter, melted
Instructions:
  • Preheat your oven to 180°C and lightly grease a 6-hole, 3/4-cup capacity non-stick muffin pan.
  • In a large bowl, gently sift the flour. Add 1/2 cup of oats and sultanas, then mix well. Create a well in the center. In a separate jug, blend milk, egg, butter, and honey. Pour the milk mixture into the well. Using a large metal spoon, gently stir until just combined (avoid over-mixing).
  • Fill muffin holes three-quarters full with the mixture, then generously sprinkle the remaining oats on top. Bake for 20 minutes or until a skewer inserted into the center comes out clean. Let the muffins cool in the pan for 1 minute before transferring them onto a wire rack to cool before serving.
