Crunchy honey sesame chicken paired with flavorful snow peas.
Ingredients:
  • 89.38 gm honey
  • 40.00 ml shao hsing (Chinese cooking wine, see note)
  • 3cm piece fresh ginger, finely grated
  • 24.40 gm oyster sauce
  • 1/4 tsp sesame oil
  • 500g chicken thigh fillets, trimmed, cut into 2cm pieces
  • 150g snow peas, trimmed
  • 36.80 gm vegetable oil
  • 24.00 gm sesame seeds
  • 21.00 gm soy sauce
  • Snow pea tendrils, to serve (optional)
  • Steamed jasmine rice, to serve
Instructions:
  • In a glass or ceramic bowl, mix together honey, wine, ginger, oyster sauce, and sesame oil. Add chicken and toss to coat. Cover and refrigerate for 1 hour, if possible. Cut snow peas in half diagonally.
  • Preheat the wok over high heat. Add 2 teaspoons of oil and swirl to coat. Add one-third of the chicken and stir-fry for 2 to 3 minutes until browned. Transfer to a bowl and cover. Repeat twice more with oil and chicken. Use a paper towel to carefully clean the wok.
  • Heat the remaining oil in a wok over high heat until shimmering. Add snow peas and stir-fry for 1 minute until vibrant. Return the chicken to the wok, then add sesame seeds and soy sauce. Stir-fry for another minute until everything is heated through. Finish by topping with snow pea tendrils and serve with rice.
