Delicious whole wheat pancakes made with honey, perfect for breakfast or brunch.
Ingredients:
  • 1.25 cups whole wheat flour
  • 2 teaspoons bran
  • 2 teaspoons baking powder
  • 1 cup milk, or more as needed
  • 1 large egg
  • 1 tablespoon honey
  • cooking spray
Instructions:
  • Combine flour, bran, baking powder, and salt in a bowl.
  • In a separate bowl, whisk together the milk, egg, and honey. Gently fold the wet ingredients into the dry ingredients until just combined - avoid overmixing to keep the pancakes fluffy. Allow the mixture to rest for 5 minutes to let the wheat and bran fully absorb the liquids.
  • While you wait, heat a griddle or skillet over medium heat and lightly coat it with cooking spray.
  • Spoon 2 tablespoons of batter onto the skillet for each pancake. Cook until slightly bubbly, about 1 minute. Flip and cook until golden brown, 2 to 3 minutes.
