Preserve fresh ramps in a zesty blend of apple cider vinegar, honey, and olive oil for a flavorful addition to any meal!
Ingredients:
  • 1 bunch ramps
  • 0.75 cup extra-virgin olive oil, divided
  • 1.5 teaspoons lemon zest
  • 1 tablespoon black peppercorns
  • 0.5 teaspoon sea salt
  • 1.25 cups apple cider vinegar
  • 0.5 cup honey
Instructions:
  • Prepare and trim ramps, then transfer them to a large skillet. Drizzle with 3 tablespoons of olive oil and mix well. Sauté over medium-high heat until ramps are wilted, about 3 to 4 minutes. Sprinkle with lemon zest, stir, and then remove from heat.
  • Check two 8-ounce jars for cracks and rust on the rings, and discard any damaged ones. Place them in simmering water while preparing the ramps. Clean new lids and rings with warm soapy water.
  • Use tongs to delicately transfer the mixture into two clean glass jars with lids. Gently press the leaves and stems into the jars using a table knife or spoon. Evenly distribute the rest of the olive oil, then add peppercorns and salt to each jar. Set aside.
  • In a small saucepan, combine vinegar and honey and whisk until smooth. Simmer over medium heat for 7 to 10 minutes. Remove from heat and pour the mixture over the ramps to ensure they are fully covered. Allow it to cool to room temperature, then seal and refrigerate for up to 2 months.
