Delight your family with flavorful honey wheat yeast rolls.
Ingredients:
  • 1 1/2 cups Gold Medal™ whole wheat flour
  • 2 to 2 1/2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon salt
  • 1 package regular active dry yeast
  • 1 1/4 cups water
  • 1/2 cup honey
  • 1/2 cup butter or margarine
Instructions:
  • Combine whole wheat flour, 1 cup of all-purpose flour, salt, and yeast in a large bowl. In a 1-quart saucepan, warm water, 6 tablespoons of honey, and 6 tablespoons of butter until very warm (120°F to 130°F). Using an electric mixer on low speed, blend warm liquid and egg into the flour mixture until moistened, scraping the bowl frequently. Increase speed to medium and beat for 3 minutes, scraping the bowl often. Gradually mix in the remaining 1 to 1 1/2 cups of all-purpose flour until a soft, smooth dough forms (dough will be sticky). Cover and refrigerate for 8 hours or overnight.
  • Grease 12 muffin cups with butter. Deflate dough gently on floured surface. Divide dough into 12 equal pieces, then divide each into 3 portions. Shape each portion into a ball, tucking edges under for a smooth top. Place 3 balls in each muffin cup with the smooth side up. Cover and let rise in a warm place (80°F to 85°F) for 45 minutes to 1 hour until doubled in size.
  • Preheat oven to 375°F. Bake uncovered dough for 18 minutes or until golden brown. Remove from pans and place on cooling racks. Allow to cool for 15 minutes.
  • In a small saucepan, melt 2 tablespoons of honey and 2 tablespoons of butter. Brush over the freshly baked rolls.
