Infuse classic cheesecake with the rich, warm flavors of a popular hot beverage, topped with a delectable sweet sauce.
Ingredients:
  • 1 1/4 cups graham cracker crumbs
  • 1/4 cup butter or margarine, melted
  • 5 packages (8 oz each) cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 2 tablespoons rum
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground nutmeg
  • 3 eggs
  • 1/2 cup packed brown sugar
  • 1/4 cup butter or margarine
  • 1/4 cup rum
  • 1/4 cup golden raisins, if desired
Instructions:
  • Preheat the oven to 350°F. Combine crust ingredients in a small bowl and press firmly into the bottom of an ungreased 9-inch springform pan. Bake for 10 minutes, then allow to cool completely. Lower the oven temperature to 325°F.
  • After letting the crust cool, use an electric mixer to beat all filling ingredients, except for the eggs, in a large bowl until smooth, about 1 minute. Then, at low speed, blend in the eggs until well combined. Finally, pour the mixture over the crust and smooth the top.
  • Bake for 1 hour 15 minutes to 1 hour 25 minutes until the edges are set and the center is slightly soft. Turn off the oven, crack the door open about 4 inches, and let the cheesecake sit in the warm oven for 30 minutes. Afterward, take it out and cool in the pan on a rack in a draft-free area for another 30 minutes.
  • To release the cheesecake, gently slide a metal spatula along the sides of the pan without removing it. Chill uncovered for about 3 hours until cold. Cover and refrigerate for at least 9 hours, but no more than 48 hours.
  • In a 1 1/2-quart saucepan, combine sauce ingredients and bring to a boil over medium heat, stirring constantly. Cook for 3 to 4 minutes, stirring constantly, until slightly thickened.
  • To serve, gently glide a metal spatula along the side of the cheesecake to loosen, then remove the pan's side. Enjoy with a warm sauce and store covered in the refrigerator.
