Crisp and golden Southern cornbread cakes, fried in shortening for a classic, easy-to-make dish.
Ingredients:
  • 1 cup cornmeal
  • 1 teaspoon white sugar
  • 0.75 cup boiling water
  • 1 tablespoon bacon grease
  • 1 cup bacon grease, or as needed
Instructions:
  • In a medium bowl, mix cornmeal, salt, and sugar. Stir in boiling water and 1 tablespoon of savory bacon grease until it melts completely.
  • In a large skillet, heat bacon grease to a depth of 1/2-inch until it reaches 375 degrees F (190 degrees C).
  • Form the cornmeal mixture into 12 flat balls using a heaping tablespoon as a guide for measuring.
  • Sear in hot oil until crispy and golden, about 5 minutes. Drain on paper towels and serve hot.
