Effortlessly make multiple loaves of moist and flavorful cornmeal molasses bread using a simple, time-saving method.
Ingredients:
  • 4 cups boiling water
  • 1 cup cornmeal
  • 0.66670000553131 cup molasses
  • 0.5 teaspoon baking soda
  • 0.5 cup margarine
  • 2 tablespoons salt
  • 4 cups cold water
  • 0.25 cup warm water (110 degrees F/45 degrees C)
  • 1 (.25 ounce) package active dry yeast
  • 20.5 cups bread flour
Instructions:
  • Pour boiling water into a large mixing bowl. Slowly incorporate cornmeal into the boiling water to create mush, stirring continuously to remove any large lumps. Combine baking soda with molasses and beat until light and foamy. Combine molasses mixture with the cornmeal mixture. Mix in butter or margarine and salt. Stir in cold water until the mixture is lukewarm. Dissolve yeast in 1/4 cup warm water and add it to the cornmeal mixture. Gradually add flour.
  • Transfer dough to a lightly floured surface and knead until smooth. Place in a greased bowl, grease the top, cover with a damp cloth, and let it rise until doubled in size.
  • After punching down the dough, divide it into 6 parts. Shape 4 parts into loaves and place them in 9 x 5 inch loaf pans. With the remaining dough, form 2 dozen rolls and let everything rise until doubled.
  • Bake at 350 degrees F (175 degrees C) until golden brown, about 35-40 minutes.
