Easily customize Chef John's chocolate truffle recipe with your favorite flavors, like festive gingerbread spice for a holiday twist!
Ingredients:
  • 326 grams dark chocolate chips
  • 0.75 teaspoon ground ginger
  • 0.5 teaspoon ground cinnamon
  • 1 pinch finely ground black pepper
  • 1 tiny pinch salt
  • tiny pinch cayenne pepper
  • 196 grams heavy cream
  • 2 cups dark chocolate chips, or as needed
  • 1 crispy gingersnap cookie
Instructions:
  • Place chocolate chips in a heat-proof mixing bowl, then add ginger, cinnamon, black pepper, salt, and cayenne. Heat cream over medium heat until it just simmers. Remove from heat and pour over chocolate. Gently shake the bowl to cover the chocolate completely and let it sit for 2 minutes. Slowly whisk until mixture becomes a thick, glossy ganache.
  • Chill ganache until firm, then shape into small balls using a sorbet scoop or by hand. Place on a lined baking sheet and chill until firm. Roll again for a smooth finish if necessary.
  • Create a double boiler by setting a heat-proof bowl over a pot of simmering water on low heat. Melt most of the chocolate chips, setting aside 1/3 cup. This should take around 5 minutes. While waiting, break the gingersnap in half and place it on a plate next to a microplane. Stir in the reserved chocolate chips until fully melted and smooth. Remove from heat.
  • Indulge truffles in velvety melted chocolate using your hands or a fork, then swirl them on a baking sheet. Sprinkle grated gingersnap on top, allowing the coating to dry until firm. Optionally, trim off any extra chocolate at the base with the back of a knife.
