Ingredients:
  • 1 pound dried beans (see below for cooking times for specific beans)
  • 8 cups water
  • 1 tablespoon olive oil
  • 1 to 2 teaspoons salt
  • 2 o 3 cloves peeled garlic, optional
  • 1 bay leaf, optional
Instructions:
  • Add all the ingredients to the pressure cooker, ensuring not to fill it beyond halfway.
  • Close the pressure regulator valve by setting it to the "sealing" position to secure the lid.
  • Pressure cook the beans according to the times specified for each type. The pressure cooker will come to full pressure in about 15 to 20 minutes before cooking starts. Consulting your pressure cooker manual for precise timings is recommended.
  • To release pressure: Once cooking is complete, you can either let the pressure release naturally for 20 to 30 minutes or use the "quick release" method by opening the pressure valve. Be cautious of potential foaming when doing a rapid release. For best results, allow natural release for optimal bean shape and to prevent foaming. If beans need more time, reseal the pressure cooker, set to "sealing," and cook at high pressure for an additional 5 to 10 minutes, checking and cooking longer if necessary.
