Ingredients:
  • 125.00 ml cherries, halved
  • 125.00 ml mixed peel
  • 125.00 ml raisins, chopped
  • 85.00 gm sultanas
  • 5.00 gm mixed spice
  • 2.50 gm ground cinnamon
  • 2.50 gm ground nutmeg
  • 2 tsp rum, or brandy
  • 4.40 gm vanilla essence
  • 631.25 gm cream
  • 150.00 gm icing sugar, sifted
  • 4 egg whites
  • 125.00 ml slivered almonds, toasted
  • 5.00 gm cocoa, mixed with 5.00 gm hot water
Instructions:
  • Mix together the fruits and spices, then stir in the alcohol and vanilla. Let it sit overnight for the flavors to meld together beautifully.
  • Whip cream with half of the icing sugar until stiff peaks form. In a separate bowl, whip egg whites with the remaining icing sugar until stiff peaks form. Gently fold the two mixtures together.
  • Combine the fruit, almonds, and cocoa mixture, then transfer it into a 2-liter foil-lined basin. Freeze overnight.
  • Invert basin and unmold pudding. Allow to sit at room temperature for about 10-15 minutes to soften before serving.
