Make a refreshing fruity frozen dessert.
Ingredients:
  • 500ml custard
  • 300ml extra light thickened cream
  • 80ml honey
  • 2 large mangoes, peeled
  • 2 large bananas, peeled
  • 5 passionfruit, halved
  • Fresh raspberries, to serve
Instructions:
  • Prepare a 10cm x 20cm loaf pan by lining it with plastic wrap, ensuring extra hangs over the sides. Mix the custard, cream, and honey in an airtight container. Freeze covered for 4 hours or until nearly firm.
  • Blend the mixture until velvety smooth, then transfer to a spacious bowl.
  • Blend the ripe mango and bananas until smooth. Combine with the custard mixture and passionfruit pulp, stirring until thoroughly incorporated. Transfer the mixture into a loaf pan, cover with plastic wrap, and freeze overnight.
  • Transfer the mixture onto a wooden chopping board, discard the plastic wrap, cut into slices, and enjoy with ripe raspberries.
