Cool off with refreshing fruit slushies.
Ingredients:
  • 375ml (1 1/2 cups) water
  • 315g (1 1/2 cups) caster sugar
  • 2 x 125g punnets blueberries
  • 2 x 125g punnets raspberries
  • 187.50 ml passionfruit pulp (about 6 passionfruit)
  • 3000.00 ml ice cubes
Instructions:
  • In a saucepan, combine water and sugar over low heat, stirring until sugar dissolves. Increase heat to medium-high and bring to a boil. Simmer for 10 minutes, then cool slightly.
  • Heat one-third of the syrup in a saucepan until simmering. Add the blueberries and cook over low heat for 3 minutes until the syrup changes color. Strain into a jug. Repeat the process with half of the remaining syrup and the raspberries, then with the remaining syrup and the passionfruit pulp. Enjoy!
  • Pour each of the fruit syrups into individual airtight bottles and refrigerate to chill.
  • Add the ice cubes to a blender and blend until finely crushed. Divide the crushed ice among serving glasses and top with your favorite fruit syrup before serving.
