Soft and chewy iced ginger cookies with a spicy-sweet cinnamon flavor, perfect year-round treat. Optional frosting for extra deliciousness.
Ingredients:
  • 1.5 teaspoons ground ginger
  • 0.75 teaspoon baking soda
  • 0.5 cup unsulfured molasses
  • 0.5 cup butter, melted
  • 0.25 cup evaporated milk
  • 0.75 teaspoon vanilla extract
  • 2.25 cups all-purpose flour, or as needed
  • 0.5 (8 ounce) package cream cheese
  • 0.25 cup butter, softened
  • 1 (16 ounce) package confectioners' sugar
  • 0.5 (11 ounce) package individually wrapped caramels, unwrapped
  • 0.25 cup half-and-half
  • 1 pinch sea salt, or to taste
Instructions:
  • Preheat the oven to 375°F (190°C) and prepare a baking sheet with parchment paper or a Silpat® baking mat.
  • In a bowl, whisk together sugar, ginger, cinnamon, baking soda, nutmeg, and salt until well combined. Stir in molasses, melted butter, evaporated milk, and vanilla extract until fully incorporated. Gradually add flour, 1 cup at a time, stirring continuously until just mixed. If the dough is sticky, add up to 1/4 cup more flour as needed.
  • Using a spoon, dollop the dough onto the baking sheet, making sure they are 2 inches apart. Gently press down on each mound with floured fingertips to flatten to a 1/4-inch thickness.
  • Bake the cookies in the preheated oven until they are lightly browned, approximately 10 minutes. Then, transfer them to a rack and allow them to cool completely for at least 30 minutes before frosting.
  • In a bowl, use an electric mixer to combine cream cheese and 1/4 cup of butter until smooth. Mix in confectioners' sugar and vanilla extract until creamy frosting forms.
  • In a small saucepan, melt caramels with half-and-half over low heat, stirring constantly until smooth and well combined, approximately 10 minutes.
  • Spread a generous amount of frosting on the cooled cookies, drizzle with caramel sauce, and sprinkle with sea salt for a decadent finish.
