Indulge in delicious pumpkin bars with sweet vanilla icing - a timeless treat.
Ingredients:
  • 2 1/4 cups Gold Medal™ all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 1/2 cups packed brown sugar
  • 3/4 cup butter or margarine, softened
  • 1 cup canned pumpkin (not pumpkin pie mix)
  • Finely chopped crystallized ginger, if desired
  • 2 packages (3 oz each) cream cheese, softened
  • 2 tablespoons butter or margarine, softened
  • 2 cups powdered sugar
  • 1 to 2 teaspoons vanilla
Instructions:
  • Preheat oven to 350°F. Grease a 15x10x1-inch rectangular pan with shortening. In a medium bowl, combine flour, baking powder, cinnamon, and salt; set aside. In a large bowl, cream together brown sugar, butter, and vanilla using an electric mixer until smooth. Mix in eggs and pumpkin until combined. Gradually mix in the flour mixture. Spread the batter in the prepared pan.
  • Bake for 20 to 25 minutes until a toothpick inserted in the center comes out clean. Allow to cool completely for about 1 hour.
  • Combine cream cheese, butter, and powdered sugar in a small bowl. Mix until smooth, then add vanilla. Spread the icing over the cooled bars and sprinkle with ginger. Cut into 10 rows by 6 rows to serve.
