Deliciously spiced pumpkin cookies, topped with sweet icing. Perfect for fall!
Ingredients:
  • 2.5 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground cloves
  • 1.5 cups white sugar
  • 0.5 cup butter, softened
  • 1 cup canned pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups confectioners' sugar
  • 3 tablespoons milk
  • 1 tablespoon melted butter
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease two cookie sheets.
  • In a medium bowl, mix together flour, cinnamon, baking powder, baking soda, nutmeg, cloves, and salt to create the cookie dough.
  • In a mixing bowl, beat sugar and butter until fluffy, about 2 to 3 minutes. Add pumpkin, egg, and vanilla; mix until creamy. Stir in flour mixture until well combined. Spoon dough onto cookie sheets and gently flatten.
  • Bake in the preheated oven for 15-20 minutes until centers are set, switching racks halfway through. Cool cookies on a wire rack for about 30 minutes until reaching room temperature.
  • Prepare the icing by combining confectioners' sugar, butter, milk, and vanilla in a bowl until creamy. Adjust the milk until it reaches a drizzling consistency.
  • Use a fork to elegantly drizzle the icing over the cooled cookies.
