Indulgent iced pumpkin scones with a double glaze for a decadent brunch treat.
Ingredients:
  • 2 cups all-purpose flour
  • 3 tablespoons white sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground ginger
  • 6 tablespoons cold butter, cut into 1-inch squares
  • 0.5 cup canned pumpkin
  • 1 large egg
  • 3 tablespoons half-and-half
  • 1 cup powdered sugar, or as needed
  • 2 tablespoons milk, or as needed
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 0.25 teaspoon ground cinnamon
  • 0.125 teaspoon ground nutmeg
  • 1 pinch ground ginger
  • 1 pinch ground cloves
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C) and coat a baking sheet with parchment paper.
  • In the bowl of a stand mixer, combine flour, 1/4 cup plus 3 tablespoons sugar, baking powder, salt, cinnamon, nutmeg, cloves, and ginger. Use the paddle attachment to mix. Add butter and toss with a spatula to coat it in the flour mixture. Mix until the texture resembles cornmeal with butter pieces no larger than a pea, around 2 minutes.
  • Blend pumpkin, egg, and half-and-half until smooth. Gently mix into flour until dough forms a ball.
  • Transfer the dough to a floured surface and shape it into a 3/4 to 1-inch thick rectangle using your hands. Cut the dough into 4 rectangles with a pizza cutter, then cut each rectangle into 2 triangles. Arrange the dough triangles on a baking sheet.
  • Bake until scones are golden brown on the edges and top, approximately 15 minutes.
  • Allow the scones to cool completely on a wire rack for about 20 minutes.
  • Combine powdered sugar and milk in a small bowl until the glaze reaches your desired consistency. Brush the glaze onto the cooled scones and let it harden for about 10 minutes.
  • Combine powdered sugar, milk, and a blend of warm spices including cinnamon, nutmeg, ginger, and cloves in a small bowl. Drizzle the spiced glaze over the first layer and let it set for about 10 minutes until completely hardened.
