Elevate your pumpkin cookies with a flavor-packed twist inspired by Delaware's pumpkin catapulting contest!
Ingredients:
  • 2 cups Cinnamon Chex™ cereal
  • 2 cups Wheat Chex™ cereal
  • 2 cups Honey Nut Chex™ cereal
  • 1/4 cup butter or margarine
  • 1/4 cup brown sugar
  • 1/4 cup canned pumpkin
  • 1 tablespoon pumpkin pie spice
  • 2 teaspoons vanilla
  • 1/2 cup pumpkin seeds
  • 1 square (1 ounce) premium white chocolate
  • 1 ounce cream cheese, softened
Instructions:
  • Combine cereals and pumpkin seeds in a large microwavable bowl. Prepare a cookie sheet lined with waxed paper or foil. In a small bowl, mix together brown sugar, pumpkin puree, and pumpkin pie spice; set aside.
  • Microwave butter in a 2-cup measuring cup on High for about 30 seconds until melted. Add the pumpkin mixture and microwave for another 30 seconds until hot. Stir in the vanilla.
  • Drizzle the pumpkin-butter mixture over the cereal and seeds, ensuring they are fully coated. Microwave on High for 5 minutes or until golden brown, stirring every minute. Transfer to waxed paper to cool.
  • Once the mix is cooling, microwave white chocolate on High for 30 seconds until melted, then mix in softened cream cheese. Drizzle the mixture over the top and refrigerate for 5 minutes until set.
  • Transfer the dish to colorful Ziploc® Brand containers and bags to enjoy with loved ones!
