Vegetarian lentil and rice meatloaf baked with onions, tomatoes, herbs, and eggs, topped with cheese for an extra savory finish.
Ingredients:
  • 0.5 cup uncooked brown rice
  • 0.75 cup dry brown lentils
  • 0.5 cup wheat germ
  • 1.5 cups dry bread crumbs
  • 1 large onion, chopped
  • 1 teaspoon dried thyme
  • 0.33333298563957 cup crushed tomatoes
  • 2 teaspoons hot sauce
  • 2 tablespoons ketchup
  • 1 tablespoon soy sauce
  • 0.33333298563957 cup shredded mozzarella cheese
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C), then perfectly cook the lentils and brown rice following the package instructions.
  • Mash lentils in a large bowl, then mix in wheat germ, bread crumbs, brown rice, eggs, onion, thyme, tomatoes, ketchup, soy sauce, and cheese before transferring the mixture to a loaf pan.
  • Bake for 1 hour with a cozy cover.
