Ingredients:
  • 1 cup canned pumpkin (not pumpkin pie mix)
  • 1/2 cup Original Bisquick™ mix
  • 1/2 cup sugar
  • 1 cup evaporated milk (from 12-oz can)
  • 1 tablespoon butter or margarine, softened
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla
  • 2 eggs
  • 1/2 cup chopped pecans
  • 1 1/2 cups Cool Whip frozen whipped topping, thawed
  • 1/4 teaspoon pumpkin pie spice
  • 8 pecan halves, if desired
Instructions:
  • Preheat the oven to 350°F and generously spray a 9-inch glass pie plate with cooking spray.
  • Combine pumpkin, Bisquick mix, sugar, milk, butter, pumpkin pie spice, vanilla, and eggs in a medium bowl. Mix until well blended, then fold in chopped pecans. Transfer mixture into a pie plate.
  • Bake for 35 to 40 minutes or until a knife inserted in the center comes out clean. Allow to cool completely, approximately 1 hour.
  • Mix airy whipped topping with a hint of 1/4 teaspoon of pumpkin pie spice. Top the pie with this blissful mixture and beautifully arrange pecan halves. Keep the pie covered in the refrigerator for freshness.
