Overnight marinated chicken, tender and bursting with Tandoori flavors. Skip the red coloring for a more natural touch.
Ingredients:
  • 3 pounds bone-in chicken pieces
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon meat tenderizer
  • 2 cups plain yogurt, divided
  • 3 tablespoons ground cumin
  • 2 tablespoons ground coriander
  • 0.33333334326744 cup chopped fresh cilantro
  • 2 teaspoons paprika
  • 0.5 teaspoon ground turmeric
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 6 cloves garlic, minced
Instructions:
  • Score the chicken pieces with shallow crosswise cuts to enhance flavor absorption. Combine lemon juice and meat tenderizer, then massage into the chicken meat. Transfer the chicken to a shallow dish.
  • In a blender or food processor, combine 1/2 cup yogurt, cumin, coriander, cilantro, paprika, turmeric, salt, pepper, and garlic until smooth. Transfer the mixture to a bowl and mix in the remaining 1 1/2 cups of yogurt. Pour this marinade over the chicken, cover, and refrigerate for at least 8 hours or overnight.
  • Preheat the grill until it reaches a medium heat.
  • Prepare the grill grate by lightly oiling it. Take the chicken out of the marinade and dispose of any excess. Grill the chicken for 30 to 45 minutes, turning regularly to avoid charring, until the juices run clear. Smaller pieces may cook faster.
