Indian spiced potatoes, peas, and carrots for a flavorful and vibrant side dish.
Ingredients:
  • 5 tablespoons vegetable oil
  • 1 teaspoon ground turmeric
  • 1 tablespoon ground coriander
  • 1 teaspoon chili powder
  • 6 potatoes, diced
  • 1 (10 ounce) package frozen mixed peas and carrots
  • 3 tablespoons water, or as needed
Instructions:
  • In a large skillet over medium-high heat, sizzle the oil and sauté the onion with a flavorful blend of cumin, turmeric, coriander, chili powder, and salt until the onion caramelizes beautifully.
  • Lower the heat to medium and mix in the potatoes, carrots, and peas until coated. Cover and simmer until the potatoes are tender, around 20 minutes. Stir occasionally and add water as needed to prevent sticking.
