Quick and flavorful chili served on crispy fry bread with taco fixings.
Ingredients:
  • 1 tablespoon butter
  • 1 onion, chopped
  • 2 (15 ounce) cans pinto beans, undrained
  • 1 (15 ounce) can kidney beans, undrained
  • 1 (15 ounce) can pork and beans
  • 1 (16 ounce) can tomato sauce
  • 3 tablespoons sugar
  • 0.5 (1.25 ounce) package chili seasoning mix
  • 1 teaspoon chili powder
  • 0.5 teaspoon seasoned salt
  • 2 tablespoons baking powder
  • 6 tablespoons white sugar
  • 2 cups water, or as needed
  • 1 cup all-purpose flour
  • 3 cups vegetable oil for frying
  • 2 cups shredded lettuce
  • 2 tomatoes, chopped
  • 1 cup shredded Cheddar cheese
Instructions:
  • In a skillet over medium heat, melt the butter until it's sizzling and cook the chopped onion until it turns translucent, which should take about 5 minutes.
  • In a large saucepan over medium-high heat, combine pinto beans, kidney beans, pork and beans, tomato sauce, cooked onion, and 1/4 cup water. Stir well. Bring to a boil, then reduce heat to low. Add 3 tablespoons sugar, chili seasoning mix, chili powder, and seasoned salt. Let the chili simmer for 10 to 20 minutes, stirring occasionally.
  • In a large mixing bowl, combine 3 cups of flour, baking powder, 6 tablespoons of sugar, and salt. Add 2 cups of water or enough to make a workable dough. Spread 1 cup of flour on a work surface. Scoop up about 1/4 cup of dough, drop it onto the flour, and sprinkle some flour on top. Roll the dough into a flat round tortilla.
  • Bring oil to a temperature of 375 degrees F (190 degrees C in a deep-fryer or large skillet.
  • Carefully place the tortilla into the hot oil and fry until golden brown on both sides for about 2 to 3 minutes each. The dough will puff up as it cooks. Transfer the fry bread to paper towels to drain, then repeat with the remaining dough until finished.
  • Prepare a beautiful array of toppings by arranging lettuce, tomatoes, Cheddar cheese, 1 chopped onion, and sour cream in individual bowls. When ready to serve, generously spoon chili onto each piece of fry bread, sprinkle with chosen garnishes, and finish with a dollop of sour cream on top.
