Spicy Indian-style chicken patties - quick and flavorful dinner choice!
Ingredients:
  • 500g chicken mince
  • 87.50 gm jalfrezi curry paste
  • 82.50 ml frozen peas
  • 40.00 ml fresh coriander leaves, chopped
  • 240g cauliflower
  • 2 green onions, thinly sliced
  • 1 small carrot, grated
  • 33.60 gm coconut oil
  • Plain yoghurt, to serve
  • Extra coriander sprigs, to serve
Instructions:
  • Combine mince, curry paste, peas, coriander, cauliflower, onion, and carrot in a large bowl. Season with salt and pepper, then mix thoroughly.
  • Form 1/4 cup of the mince mixture into a patty, then continue with the rest of the mixture to yield 12 patties in total.
  • In a large frying pan over medium heat, sizzle patties in batches for 4 to 5 minutes per side, until they're beautifully browned and fully cooked.
  • Plate the patties alongside a dollop of yogurt, fresh salad leaves, and additional coriander sprigs for garnish.
