Instant Pot® chicken thighs with creamy pesto sauce and veggies - a family favorite!
Ingredients:
  • 5 bone-in chicken thighs, skinned
  • 1 tablespoon all-purpose flour, or as needed
  • 1.5 cups chicken broth
  • 1 (8 ounce) package cream cheese
  • 1 (12 ounce) package penne pasta
  • 2 cups cut asparagus, 1-inch lengths
  • 2 cups cut green beans, 1-inch pieces
  • 4 ounces basil pesto (such as Classico® Traditional)
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon garlic powder
Instructions:
  • Season chicken thighs generously with salt and pepper, then coat lightly with flour, shaking off any extra.
  • Begin by heating a multi-functional pressure cooker (like an Instant Pot®) on the Saute function. Add olive oil and chicken, cooking until the chicken is lightly browned (approximately 3 minutes). Pour in the chicken broth, then securely close and lock the lid. Choose the Poultry setting and set the timer for 30 minutes. Give it 10 to 15 minutes for the pressure to build up.
  • Follow the manufacturer's instructions to release pressure using the quick-release method for about 5 minutes. Then, unlock and remove the lid carefully.
  • Combine cream cheese, penne pasta, asparagus, green beans, pesto, onion powder, and garlic powder. Mix thoroughly. Seal lid, choose Rice setting, and set timer for 3 minutes. Let pressure build for 10 to 15 minutes, then follow manufacturer's instructions to cook.
  • Use the quick-release method to release pressure safely following the manufacturer's instructions for about 5 minutes. Then, unlock and remove the lid.
